  • 2 ribs celery, minced

For the beef

  • One 3-to-4-pound boneless apical circular roast oregon chuck roast
  • 6 cloves garlic, each chopped lengthwise successful half

  • 3 tablespoons extra-virgin olive oil
  • 1 onion, thinly sliced
