This hearty minestrone is cleanable for acold nights — and for utilizing up the ends of vegetables successful your fridge. Leave the ribs connected the Swiss chard for immoderate added texture.

Ingredients

  • 1/4 cupful extra-virgin olive oil
  • 1 yellowish onion, chopped
  • 1 spoon dried thyme
  • 1 spoon dried oregano
  • 1 spoon kosher salt, oregon much arsenic needed
  • 1/2 spoon freshly crushed achromatic pepper, oregon much arsenic needed
  • 1/2 spoon crushed cinnamon
  • 1/4 spoon crushed cloves
  • 1/2 clump (5 ounces) Swiss chard, trimmed and thinly sliced
  • 5 ounces cabbage, cored and thinly sliced
  • 2 carrots, scrubbed and thinly sliced (2 cups)
  • 5 cups homemade oregon no-salt-added rootlike broth (see related recipe)
  • One (14 1/2 -ounce) tin diced tomatoes
  • 1 1/2 cups ditalini oregon different tiny macaroni
  • One (14 -ounce) tin no-salt-added cannellini oregon cranberry beans, drained and rinsed
  • 2 tablespoons reddish vino vinegar
