  • 3 tablespoons reddish vino vinegar
  • 1 lb reddish beets, scrubbed, ends trimmed
  • 1 tablespoonful olive oil

  • Freshly crushed achromatic pepper
  • 1/2 mean reddish onion, finely diced
  • 4 celery stalks, chopped into 1/4-inch heavy slices
  • 1/2 cupful dried cranberries (may substitute dried cherries)
  • 1/2 spoon crushed cinnamon
  • 3/4 cupful Ginger-Curry Vinaigrette (see pursuing recipe)
  • 1/2 cupful pecans, toasted (see NOTE) and coarsely chopped
