  • 1/2 lb boneless, skinless chickenhearted thighs, chopped into bite-size pieces
  • 1/2 lb tiny shrimp, peeled and deveined
  • 1 1/4 cups shiitake mushroom, caps only, thinly sliced
  • 1 1/4 cups Napa cabbage, finely shredded
  • 1 1/4 cups caller spinach, julienne (cut into precise bladed strips)
  • 3/4 cupful carrots, thinly sliced (crosswise)
  • 3/4 cupful snowfall peas, sprigs trimmed
  • 1/4 cupful low-sodium soy sauce
  • 1 tablespoonful mirin (Japanese saccharine cooking wine)

For the udon noodle pot

  • 2 scallions, achromatic and airy green, thinly sliced connected the diagonal, for garnish
