  • 1/2 tiny achromatic bulb (3 ounces total), grated
  • 3 ail cloves, minced oregon finely grated
  • 2 scallions, thinly sliced
  • One (1/2-inch) portion caller ginger, peeled and grated
  • 2 1/2 tablespoons soy sauce, preferably low-sodium
  • 1 tablespoonful mirin

  • 1/4 spoon good salt
  • 1/8 spoon freshly crushed achromatic pepper
