We similar Dutch-processed cocoa pulverization here, due to the fact that it has been treated to trim acidity, meaning you get richer cocoa flavor.

  • 1 tablespoonful Dutch-process cocoa pulverization (see headnote)
  • 3 1/2 ounces semisweet cocoa (55 to 60 percent cacao), chopped
  • 2 1/2 ounces bittersweet cocoa (about 70 percent cacao), chopped
  • 1 1/4 teaspoons granulated sugar
  • 1 3/4 cups beverage (whole, low-fat oregon nonfat)
  • Pinch good salt
  • 1/4 cupful dense cream
  • 1/4 spoon vanilla extract
