This is simply a radically updated mentation of the 1970s-era crockery fashionable astatine potlucks successful Texas and made often by Food exertion Joe Yonan's mother, Dolores Jones.

Ingredients

For the vinaigrette

  • 1/4 cupful caller cilantro leaves, coarsely chopped
  • 1/4 cupful extra-virgin olive oil
  • 1/4 cupful canola oil
  • 1/4 cupful reddish vino vinegar
  • 1 clove garlic, coarsely chopped
  • 1 spoon granulated sugar
  • 1/2 spoon good salt, positive much arsenic needed

For the salad

  • 1/2 cupful peanut oil, for frying
  • Six 6-inch maize tortillas
  • 12 cups lightly packed, torn romaine lettuce leaves
  • 3 cups homemade oregon no-salt-added canned achromatic beans, rinsed and drained (two 15-ounce cans)
  • 6 scallions, trimmed and thinly sliced connected the diagonal (white and greenish parts)
  • 12 ounces feta cheese, crumbled
  • 12 ample pieces 12-Hour Tomatoes (see related recipe), drained and chopped (may substitute 18 oil-packed sun-dried tomatoes)
