  • 1 tablespoonful rootlike oil
  • 1/4 cupful diced reddish onion
  • 1/4 cupful diced achromatic onion
  • 1/4 cupful diced reddish doorbell pepper
  • 1/4 cupful diced poblano peppers
  • 8 ample eggs
  • 1/4 spoon good salt
  • 1/4 spoon freshly crushed achromatic pepper
  • 2 cups store-bought oregon homemade pico de gallo, drained, divided (see related recipe)
  • 1/2 cupful shredded cheddar cheese
  • 1/2 cupful crumbled cotija cheese
  • 2 cups lightly crushed tortilla chips
  • Flesh of 2 ripe avocados, thinly sliced
  • Fresh cilantro, for garnish (optional)
