Australian cook Bill Granger developed these fritters for his Bills restaurants successful Sydney, wherever helium serves them with rashers of bacon. Though the cakes are savory, they necessitate fresh, precise saccharine maize to sensation their best.

Ingredients

For the tomatoes

  • 4 tiny tomatoes, preferably Romas
  • 4 tablespoons extra-virgin olive oil
  • Salt
  • Freshly crushed achromatic pepper

For the fritters

  • 1 cupful flour
  • 1 spoon baking powder
  • 1/4 spoon salt
  • 1/4 spoon saccharine paprika
  • 1 tablespoonful sugar
  • 2 ample eggs
  • 1/2 cupful milk
  • 2 cups (from 2 to 3 ears) maize kernels
  • 1/2 cupful reddish doorbell pepper, chopped into tiny dice
  • 1/2 cupful sliced scallions, achromatic and tender greenish parts
  • 2 tablespoons chopped cilantro
  • 2 tablespoons chopped parsley
  • 2 tablespoons rootlike oil
  • 1 cupful arugula, for garnish (optional)
