Ingredients

  • 1 lb mussels, preferably from Prince Edward Island

For the greenish puree

  • 1 ample oregon 2 tiny leeks
  • 1 tablespoonful salted butter
  • 1/2 spoon truffle lipid (see headnote)
  • 1/2 cupful dense cream
  • 1 stem basil
  • 1 stem flat-leaf parsley
  • 5 ounces caller spinach leaves
  • Leaves from 1 clump basil
  • Leaves from 1 clump flat-leaf parsley
  • 3 crystal cubes

For assembly

  • 8 ounces Belgian endive
  • 1/4 mean reddish onion
  • 1- oregon 2-inch portion crisped bacon
  • 2-inch portion cooked chopped chorizo
  • 6 pounds mussels, preferably from Prince Edward Island
  • 2 teaspoons finely chopped truffle oregon 1 spoon truffle oil
  • 1 1/2 cups dense cream
  • 6 tablespoons Stella Artois beer
  • Salt
  • Freshly crushed achromatic pepper
