In Italy, these are traditionally made for St. Joseph's Day, March 19. The dough is often deep-fried oregon piped retired onto baking sheets, but here's a simpler attack that requires nary blistery lipid oregon pastry container -- conscionable a muffin tin. You could besides marque these successful mini-muffin tins.

Ingredients

For the sfingi

  • 1 cupful flour
  • 1/4 spoon salt
  • 1 cupful water
  • 8 tablespoons (1 stick) unsalted butter
  • 4 ample eggs
  • 1 tablespoonful sugar
  • 1 tablespoonful finely grated orangish zest
  • 1 tablespoonful finely grated citrus zest

For the filling and assembly

  • 16 ounces caller ricotta cheese
  • 1 cupful sugar
  • 2 teaspoons to 3 teaspoons almond extract
  • 1 tablespoonful rum (may substitute 1 tablespoonful rum extract)
  • 1 spoon crushed cinnamon
  • 1 tablespoonful finely grated orangish zest
  • 2 tablespoons mini semisweet cocoa chips
  • 1/3 cupful full oregon low-fat milk, oregon arsenic needed
  • 16 maraschino cherries, drained, for garnish
