Bacon, cooked until conscionable golden, gives this quick-cooking legume stew a long-simmered flavor, says cook Carla Hall. It makes for a warming and cozy meal, particularly connected a chilly night.

Serve it with cornbread for a comforting meal.

Ingredients

  • 2 teaspoons neutral oil, specified arsenic canola oregon vegetable
  • 1 mean yellowish bulb (8 ounces), diced small
  • 3/4 spoon good salt
  • 4 ounces thick-cut bacon, chopped into 1/4-inch batons (like lardons)
  • 1 ail clove, thinly sliced
  • 1 Scotch bonnet oregon habanero pepper, seeded and minced
  • One (15-ounce) tin food beans
  • One (15-ounce) tin kidney beans, drained and rinsed
  • One (15-ounce) tin pinto beans, drained and rinsed
  • Generous 1 3/4 cups (15 ounces) low-sodium chickenhearted broth
