Take this summertime supper staple. Here a creamy herbaceous dressing is utilized alternatively of a vinaigrette, and smoked oregon cooked salmon stands successful for tuna. Or service it atop spinach oregon arugula and swap thinly sliced grilled tuna steaks for the salmon.

For the salad

  • 1 lb reddish caller potatoes
  • Pinch salt
  • 1 lb greenish beans, ends trimmed
  • 1 pint grape oregon cherry tomatoes, oregon 3 reddish tomatoes chopped into wedges
  • 1 cupful Nicoise olives (optional)
  • 1 lb salmon, smoked oregon cooked

For the dressing

  • 1 cupful mayonnaise
  • 1 clump watercress, astir chopped
  • 1 clump tarragon, astir chopped
  • 1 clump chives, chopped into 2-inch lengths
  • 2 teaspoons citrus juice, positive further to taste
  • 1 spoon Dijon-style mustard (optional)
  • Kosher salt
  • Freshly crushed achromatic pepper
