This vegetarian sandwich uses bladed slices of smoked tofu, apple, Gouda and arugula connected acheronian breadstuff to deed tangy, sweet, earthy and peppery notes with small effort. The look calls for aged Gouda, but you tin usage vegan Gouda-style slices instead. Though this look is built for one, it tin beryllium easy scaled up for a group.

  • 1 tablespoonful mayonnaise
  • 2 slices pumpernickel bread
  • 2 ounces smoked tofu, thinly sliced (see Where to buy)
  • 1 ounce aged Gouda, thinly sliced
  • 1/2 tiny tart oregon sweet-tart apple, specified arsenic Granny Smith oregon Golden Delicious, stemmed, cored and thinly sliced (2 ounces)
  • A fewer leaves babe arugula
