Just 3 main ingredients — and nary chopping oregon stirring — present an astounding extent of spirit successful this tender, slow-cooked beef successful herb and ail sauce. The archetypal oven-braised mentation was inspired by 2 recipes that ran successful Gourmet magazine: 1 for “Aunt Gladys’s Beef” from the precocious novelist Laurie Colwin, and different for creator and bon vivant Nathalie Waag’s limb of lamb with tomatoes and garlic. Serve with creamy, buttery polenta for the eventual comfortableness meal.

Ingredients

  • One (3-to-3 1/2-pound) boneless chuck roast, preferably tied (see Notes)
  • 3/4 spoon good salt, positive much arsenic needed
  • 1/2 spoon freshly crushed achromatic pepper, positive much arsenic needed
  • One (28-ounce) tin full peeled tomatoes, with their juices, chopped up with room shears oregon crushed by hand
  • 1 caput garlic, separated into cloves (unpeeled)
  • Cooked polenta, for serving
  • Chopped caller flat-leaf parsley, for serving (optional)
