  • 1 ample leek, achromatic and airy greenish parts only, halved lengthwise and chopped into 1-inch slices
  • 8 ounces mixed chaotic mushrooms, specified arsenic shiitake, cremini oregon oyster, stemmed and sliced
  • 1 clump large-bulbed scallions, trimmed to clasp 1 inch of the greenish part
  • 1 bundle (5 ounces) Boursin cheese
  • Salt
  • Freshly crushed achromatic pepper

For the spoonbread

  • 2 ounces maize tortilla chips, preferably organic
  • 2 tablespoons flour
  • 1 spoon sugar
  • 1/4 spoon salt
  • 1/4 spoon freshly crushed achromatic pepper
  • 2 cups beverage (may substitute 2 percent milk)
  • 3 tablespoons unsalted butter, chopped into tiny pieces
  • 4 ample eggs
  • 1/2 cupful grated parmesan cheese
