This fashionable edifice dish, sometimes called paneer food masala oregon paneer makhani, uses cashews and tomatoes to enrobe the Indian food cubes successful a rich, mildly spiced sauce. It employs 3 kinds of dairy, but you tin usage tofu, vegan food and nondairy pick alternate if you’d like. Serve with flatbread oregon rice.

Ingredients

Servings: 4 (makes 4 cups)

For the cashew puree

  • 1/2 cupful (2 ounces) earthy cashews
  • 1/2 cupful boiling water

For the paneer

  • 4 tablespoons (2 ounces) unsalted butter, divided
  • 8 ounces paneer, chopped into 1-inch cubes (may substitute extra-firm tofu, drained and patted dry)
  • 2 cups herb puree
  • 3/4 spoon chili powder
  • 1/2 spoon garam masala
  • 1/2 spoon paprika
  • 1 cupful water
  • 1 spoon granulated sugar
  • 3 tablespoons dense cream
  • 1/2 spoon good salt, positive much to taste
  • 1 spoon coarsely grated caller ginger (optional)
  • 5 slices reddish chile (optional)
