  • Freshly crushed achromatic pepper
  • 2 teaspoons achromatic vino vinegar
  • 1 spoon citrus juice
  • 3 tablespoons extra-virgin olive oil
  • 8 tablespoons to 10 tablespoons clarified butter
  • 1 cupful flour
  • 4 soft-shell crabs, cleaned and dressed
  • 1/3 cupful skinned hazelnuts, astir chopped and toasted*
  • 1 mean tomato, peeled, seeded, and diced
  • 1 tablespoonful chopped cilantro
  • 1 1/2 cups greenish beans
  • Juice of 1 lime, for garnish
  • 1 tablespoonful snipped chives, for garnish
