  • 3 cups saccharine maize kernels (from 4 to 5 ears)
  • 1 mean reddish oregon yellowish doorbell pepper, stemmed, seeded and diced small
  • 1/2 mean reddish bulb (4 ounces total), diced small
  • 2 tablespoons olive oil, divided
  • Fine salt
  • Freshly crushed achromatic pepper
  • 1 1/4 pounds skinless salmon fillet, preferably center-cut and astir 3/4-inch heavy (pin bones removed)
  • 4 mean (8-inch) whole-wheat flour tortillas
  • 4 ounces caller goat food (chèvre), softened
  • 1/2 cupful well-shaken buttermilk
  • 2 to 3 tablespoons canned chipotles successful adobo, finely chopped
  • Sliced avocado, cucumbers and cherry tomatoes, for serving
