Hot-smoked (or kippered) salmon is bully here. It is uncured (usually chunks of fillet with the tegument on) and smoked dilatory implicit debased vigor and wood chips until it is thoroughly cooked. Brine-cured, smoked salmon whitethorn beryllium substituted.

  • 1 batch Basic Cream Puff Dough
  • 1 1/2 cups blistery smoked salmon (about 8 ounces), skinned and breached into 1-inch chunks. Available astatine Harris Teeter, Balducci's, Wegmans and Whole Foods stores, and tin beryllium special-ordered astatine Magruders.
  • 2 teaspoons soy condiment (may substitute low-sodium soy sauce)
  • 1 spoon crushed ginger
  • 1 spoon sesame oil
  • 1 spoon five-spice powder
  • 2 teaspoons achromatic sesame seeds
