Ingredients

For the risotto and salmon

  • 3 cups low-sodium rootlike broth
  • 4 ounces (about 4 cups) babe spinach leaves, rinsed but not dried
  • Salt
  • Freshly crushed achromatic pepper
  • 1 spoon olive oil
  • 1 cupful arborio rice
  • 2 tablespoons finely diced yellowish onion
  • 1 mean clove garlic, minced (1 teaspoon)
  • 4 teaspoons freshly grated Parmigiano-Reggiano cheese
  • 4 skinless salmon fillets (about 4 ounces each), pin bones removed
  • 1 spoon herbes de Provence oregon different dried herb seasoning blend (see NOTE)

For the glaze

  • 1 cupful adust reddish wine, specified arsenic a cabernet sauvignon
  • 2 tablespoons airy maize syrup
