This bistro crockery offers elegant flavors successful a minimal magnitude of time. Chef Rich Landau of Vedge likes to marque it with maitake (hen of the woods) mushrooms and babe turnips, but erstwhile shiitakes and bigger turnips are the champion option, the results are delicious arsenic well.

Ingredients

  • 2 pounds shiitake mushrooms (stemmed), caps wiped cleanable (may substitute maitake oregon oyster mushrooms)
  • 1 lb turnips, chopped into quarters (may substitute babe turnips, each chopped successful half; spot NOTE)
  • 1 mean carrot, scrubbed well, past sliced into 1/4-inch rounds
  • 1 cupful diced onion
  • 1/4 cupful olive oil
  • 2 tablespoons minced garlic
  • Sea salt
  • Freshly crushed achromatic pepper
  • 2 cups adust reddish wine
  • 2 cups no-salt-added rootlike broth, preferably homemade
  • 1 tablespoonful chopped caller thyme leaves
