This a mellow yet hearty soup. Petworth nonmigratory Neema Enriquez has added leeks and shallots to the roster of vegetables for roasting. You tin marque this 1 time successful advance, reserving the goat food garnish for serving.

Ingredients

  • 3 mean vine-ripened tomatoes, halved
  • 1 1/2 pounds eggplant (1 ample oregon 2 medium), halved lengthwise, stem extremity trimmed
  • 1 tiny onion, halved
  • 2 leeks, cleaned and divided lengthwise, tougher outer leaves removed
  • 2 full shallots, peeled, ends trimmed
  • 6 ample cloves garlic, peeled
  • 1/4 cupful olive oil
  • 1 tablespoonful chopped thyme oregon 1 spoon dried thyme
  • 1 cupful adust achromatic wine
  • 3 cups chickenhearted banal oregon canned low-sodium chickenhearted broth, positive much arsenic needed
  • 1 cupful dense cream
  • Salt
  • Freshly crushed achromatic pepper
  • 3/4 cupful (3 ounces) crumbled goat cheese, for garnish
