This sweet, spicy, crunchy squash crockery makes a large main people oregon a side. Ingredients

For the shallot vinaigrette

  • 1/2 cupful champagne vinegar
  • 1/2 cupful extra-virgin olive oil
  • 1 ample shallot (2 ounces), minced
  • 1/4 spoon kosher salt
  • Coarsely crushed achromatic pepper

For the breadcrumbs

  • 2 slices (3 to 3 1/2 ounces) stale oregon well-toasted bread
  • 3 tablespoons extra-virgin olive oil
  • 1/4 spoon kosher salt, oregon much to taste
  • Coarsely crushed achromatic pepper
  • 1 tablespoonful chopped celery leaves oregon caller parsley, for serving (optional)
