Ingredients

  • One (4-pound) full chicken
  • 1 ample yellowish bulb (11 to 14 ounces), unpeeled and halved
  • One (3-inch) portion caller ginger, halved lengthwise and smashed
  • 6 full cloves
  • 4 full prima anise
  • One (4-inch) cinnamon stick
  • One (8-by-4-inch) portion kombu
  • 1/2 clump caller cilantro, tied with butcher’s twine, positive much for garnish
  • 1 tablespoonful kosher salt, positive much to taste
  • 2 teaspoons achromatic peppercorns
  • 1 to 2 tablespoons food sauce, positive much to taste
  • 1 tablespoonful yellowish stone sugar, thenar sweetener oregon brownish sugar, positive much to taste
  • 1 cupful (6 1/2 ounces) glutinous achromatic rice, oregon your favourite atom (see NOTE)
