For this elemental salad, which is connected the paper astatine Nora successful Dupont Circle, chef-owner Nora Pouillon uses locally grown peaches and an integrated brie from Fromagerie Roussey successful France.

Ingredients

For the dressing

  • 1/2 cupful positive 1 tablespoonful extra-virgin olive oil
  • Salt
  • 2 ample shallots, minced (about 1/2 cup)
  • 1/4 cupful sherry vinegar
  • Freshly crushed achromatic pepper

For the salad

  • 1/2 cupful full skin-on almonds
  • 3 heads mean Boston lettuce (outer leaves removed), washed and dried
  • 4 ounces watercress (may substitute 1 clump flat-leaf parsley), washed, dried and stemmed
  • 4 to 6 mean peaches, preferably locally grown, pitted and chopped into quarters
  • 10 ounces room-temperature brie cheese, chopped into 16 to 24 bladed wedges
