  • 8 ounces steadfast tofu, drained and chopped into 1/2-inch cubes
  • 6 scallions (root ends trimmed), including tops, chopped into 2-inch lengths
  • 1 1/2 pounds bok choy, trimmed and coarsely chopped
  • 9 ounces vegetarian shrimp, defrosted and chopped successful fractional horizontally (may substitute 12 ounces peeled and deveined stone shrimp)
  • 1 tablespoonful cornstarch
  • 1/4 cupful water
