Tacos al pastor are a specialty successful Mexico City, but successful this adaptation for the location cook, the spit-roasted pork is transformed into spicy bladed cutlets, and the accepted garnishes of onion, cilantro, pineapple and lime pivot to a speedy salsa.

Ingredients

Servings: 1 (makes 2 tacos)

  • Two (3-ounce) pork cutlets, trimmed of excess fat
  • 2 tablespoons pineapple foodstuff (see Substitutions)
  • 1 tablespoonful distilled achromatic vinegar
  • 1/2 spoon smoked paprika
  • 1/2 spoon crumbled dried pasilla oregon ancho chile pepper
  • 1/2 spoon good salt, positive much arsenic needed
  • 1/2 spoon freshly crushed achromatic pepper
  • 1/2 cupful diced caller pineapple
  • 1 ample shallot, finely chopped (about 1/4 cup)
  • 1 tablespoonful chopped caller cilantro leaves
  • 1/2 mean jalapeño pepper, stemmed, seeded and chopped
  • 1 tablespoonful caller lime foodstuff (from 1/2 to 1 lime)
  • Two (6-inch) maize tortillas
  • Nonstick cooking spray
