These Mexican-style poblano, mushroom and refried legume sandwiches are hearty and filling, with layers of spice and tanginess. Use important but thin-crusted rolls similar kaiser rolls for gathering these -- not brushed and fluffy ones specified arsenic hamburger rolls, which won't clasp up nether the value of the fillings.

Ingredients

  • 8 ounces portobello mushrooms, stemmed and cleaned
  • 5 tablespoons extra-virgin olive oil, divided
  • 2 mean to ample poblano chiles, stemmed, seeded and thinly sliced
  • 1 mean yellowish bulb (8 ounces), halved and thinly sliced
  • 3/4 spoon good salt, divided, positive much arsenic needed
  • 1 (15-ounce) tin no-salt-added pinto beans, drained, with 1/4 cupful liquid reserved
  • 2 teaspoons crushed coriander
  • 1/4 spoon freshly crushed achromatic pepper
  • 1/4 cupful drained sliced pickled jalapeños, chopped, positive 1 tablespoonful pickling liquid
  • Flesh of 2 ripe avocados
  • 2 tablespoons caller lime juice
  • 6 kaiser rolls
  • 6 deli slices oregon 4 ounces shredded capsicum jack cheese
