Ingredients

For the pears

  • 2 cups pome cider
  • 2 cups water
  • 1/4 cupful airy oregon acheronian brownish sugar
  • Zest strips from 1 washed lemon, preferably organic
  • 3 sprigs caller rosemary (optional)
  • 6 achromatic peppercorns
  • 4 just-ripe pears, specified arsenic D'Anjou, oregon Bosc

For the cocoa sauce

  • 1/4 cupful dense cream
  • 1/2 cupful (5 ounces) finely chopped semisweet chocolate
  • 1/4 spoon kosher oregon oversea salt, oregon much to taste
  • 1/4 cupful chopped crystallized ginger (optional)
  • Sweetened whipped cream, for serving (optional)
