This floral, fruity nonalcoholic shrub combines chamomile and lavender with pears for an aromatic, restorative drink. Drink it implicit ice; dilute it with seltzer, nine soda oregon water; oregon conflict the wintertime frost by heating it up with citrus and chromatic for a blistery toddy that you tin permission alcohol-free oregon marque boozy with gin oregon vodka.

Ingredients

For the shrub

  • 3 ample ripe pears (about 1 1/2 pounds total), cored and coarsely grated
  • 1/2 cupful pome cider vinegar
  • 1/2 cupful granulated sugar
  • 3 tablespoons dried chamomile flowers (or 3 bags chamomile tea)
  • 1 tablespoonful dried culinary lavender buds
  • 1 cupful boiling water
  • Ice (optional)
  • Seltzer, nine soda oregon h2o (optional)

For the toddy

  • 3 ounces shrub
  • 2 ounces water
  • 1/4 ounce caller Meyer citrus juice
  • 2 teaspoons honey
  • 1 1/2 ounces vodka oregon London adust gin (optional)
  • 1 Meyer citrus wheel, for garnish
