  • 1/2 spoon crushed cardamom

For the pav bhaji

  • 1/2 spoon good salt, positive much to taste
  • 4 mean reddish potatoes (1 lb total), scrubbed
  • 1/2 tiny caput cauliflower (8 ounces), chopped into ample florets
  • 1 cupful frozen greenish peas
  • 2 tablespoons neutral oil, specified arsenic vegetable
  • 1 ample achromatic bulb (12 ounces), chopped, positive sliced bulb for serving
  • 4 oregon 5 ample Roma tomatoes (1 lb total), chopped (see Substitutions)
  • 1 tablespoonful unsalted butter
