In this savory loaf with dates and goat cheese, cornmeal blends with flour for a crumbly, sandy texture that slices beautifully. Omit the pancetta for a vegetarian-friendly version.

Make definite the pieces of goat cheese, dates and pancetta are each pea-size and good distributed passim the batter. Use a sweet, aureate olive oil, the much buttery the better; bitter, greenish oils are excessively beardown for this bread. You'll request an 8 1/2- by 4 1/2-inch loaf pan.

  • 3 ounces pancetta, chopped into pea-size pieces (1/4 cup; spot headnote)
  • 1/2 mean onion, minced (1/2 cup)
  • 1 1/2 cups all-purpose flour
  • 1/2 cupful cornmeal
  • 2 teaspoons baking powder
  • 1/2 spoon kosher salt
  • 12 pitted dates, chopped into pea-size pieces (about 1 cup)
  • 2 teaspoons minced caller parsley
  • 1 spoon minced caller rosemary leaves
  • 2 teaspoons minced caller chives
  • 3/4 cupful extra-virgin olive lipid (see headnote)
  • 1/2 cupful full milk
  • 3 ample eggs
  • About 3 ounces (1/3 cup) caller goat cheese, crumbled into pea-size pieces
