Ingredients

For the fish

  • 2 mean lemons, seeded and chopped into 1/4-inch slices

  • 8 6-ounce skinless rockfish fillets, pin bones removed

  • 1 clump thyme
  • 1 vanilla bean, chopped successful half
  • 2 bay leaves
  • 6 cups to 8 cups excellent-quality extra-virgin olive oil

For the condiment

  • 1 tablespoonful to 2 tablespoons olive oil
  • 1 tablespoonful unsalted butter
  • 1 rib celery, coarsely chopped
  • 1 yellowish onion, coarsely chopped
  • 1 carrot, peeled, trimmed and coarsely chopped
  • 3 to 4 leftover full steamed spiced crabs (preferably large), chopped into respective tiny pieces (edible parts only)
  • 1 spoon freshly grated ginger root
  • 2 mean cloves garlic, coarsely chopped
  • 1 stalk lemongrass (ends and outer layers discarded), bruised and chopped into 1/2-inch pieces
  • 1 cupful peeled, seeded and coarsely chopped tomatoes
  • 3 cups adust achromatic wine
  • 1 cupful h2o oregon shellfish stock
  • 1 spoon herb paste
  • 1 spoon freshly squeezed citrus juice, oregon arsenic needed
  • 1 cupful drained and finely diced sun-dried tomatoes (dry oregon oil-packed)
  • 1/4 cupful babe spinach leaves, rolled and chopped into 1/4-inch strips (chiffonade)
  • Salt
  • Freshly crushed achromatic pepper
