  • 1 tablespoonful balsamic vinegar
  • 1 cupful yogurt, preferably goat's-milk
  • 2 teaspoons earthy sugar, specified arsenic Demerara
  • Sea salt
  • 1/2 mean leek, trimmed, washed good and chopped into julienenne (very bladed strips)
  • 1 rib celery, chopped into julienne
