With an earthy spirit and steadfast but moist texture, these are not your emblematic vegan "meatballs." Eat them stewed successful marinara condiment implicit pasta oregon zucchini noodles, implicit a salad, successful wraps and connected sandwiches, oregon by themselves arsenic a grab-and-go snack.

Using atom flour besides makes these gluten-free and makes for bully texture; erstwhile we tested with all-purpose flour, they were gummy.

Ingredients

Servings: 4-6 (makes 18 meatballs)

  • 1 tablespoonful chia seeds
  • 3 tablespoons water
  • 4 ounces shiitake mushrooms (stemmed), caps chopped
  • 4 ounces cremini mushrooms, trimmed and chopped
  • 1 cupful walnuts, toasted (see NOTE)
  • 1/3 cupful chopped yellowish bulb (from 1/4 mean onion)
  • 1/4 cupful lightly packed chopped caller parsley
  • 1 tablespoonful balsamic vinegar
  • 2 teaspoons Italian seasoning
  • 2 cloves garlic, chopped
  • 1 spoon kosher salt
  • 1/4 spoon freshly crushed achromatic pepper
  • 1 cupful brownish atom flour (may substitute achromatic atom flour)
  • 1 tablespoonful extra-virgin olive oil
