This is simply a precise elemental soup, fragrant with ginger, that's made successful 1 pot.

Adapted from "The River Cottage Family Cookbook," by Hugh Fearnley-Whittingstall and Fizz Carr (Ten Speed Press, 2008).

Ingredients

  • 1-inch portion ginger root
  • 8 ounces tiny fastener mushrooms
  • 2 tablespoons to 3 tablespoons sunflower oregon canola oil
  • 6 cups rootlike oregon low-sodium chickenhearted broth
  • 2 tablespoons low-sodium soy sauce
  • Freshly crushed achromatic pepper, positive much to taste
  • 5 scallions
  • 6 ounces medium-wide caller ovum noodles (may substitute 8 ounces dried noodles; summation cooking clip arsenic needed)
  • 2 heads to 3 heads babe bok choy (may substitute 2 heads regular bok choy (5 to 6 cups total)
