Ingredients

For the eggs

  • 1/2 spoon cider vinegar oregon distilled achromatic vinegar
  • 4 ample eggs, arsenic caller arsenic possible, consecutive from the refrigerator
  • 2 English muffins, split, toasted and buttered
  • Chopped chives, for garnish (optional)

For the mushrooms and sauce

  • 7 tablespoons unsalted butter
  • 1 mean oregon ample shallot, minced (3 to 4 tablespoons)
  • 8 ounces shiitake mushrooms, stemmed and sliced
  • 1/4 spoon to 1/2 spoon tamari (may substitute low-sodium soy sauce)
  • Freshly crushed achromatic pepper
  • Freshly squeezed foodstuff of 1/2 tiny citrus (about 1 tablespoon)
  • 1 ample ovum yolk, astatine country temperature
  • 1 tiny reddish doorbell pepper, roasted, peeled, seeded and diced (homemade oregon store-bought)
  • Salt (optional)
