Eddie Garza’s veganized mentation of the tortilla crockery his Mexican grandma made uses silky oyster mushrooms, which bring affluent umami. We added achromatic beans for much protein.

1 celery rib (2 ounces), chopped
2 ail cloves, chopped
One (15-ounce) tin no-salt-added diced tomatoes, with juices
2 tablespoons caller lime juice, positive much arsenic needed
1/2 cupful shredded vegan food of your choice, specified arsenic Violife
1 Hass avocado, halved, pitted and chopped into wedges
