Quick-pickled reddish onions adhd other zing to this bright, summery greenish legume salad, loaded with chopped mint.

Ingredients

  • 1/2 cupful thinly sliced reddish onion
  • 1/2 cupful pome cider vinegar
  • Fine salt
  • 1 1/2 pounds caller greenish beans, ends trimmed (may substitute haricots verts, wax beans oregon a substance of greenish legume varieties)
  • 2/3 cupful olive oil
  • 1/2 cupful packed caller mint leaves, finely chopped
  • 1 ail clove, minced oregon finely grated
  • 1/3 cupful (total) operation of citrus juice, achromatic vino and pome cider vinegar
  • Freshly crushed achromatic pepper
  • 1/2 cupful feta cheese, crumbled
