In this chickenhearted crockery from Chetna Makan, a crispy, well-seasoned exterior gives mode to juicy nutrient inside. Makan says that aft she developed this recipe, she couldn’t halt eating it, and we tin spot why.

Ingredients

  • 1/4 cupful (1 ounce) chickpea flour (may substitute all-purpose flour)
  • 1/4 cupful plain whole-milk yogurt (see Notes)
  • 1 spoon Kashmiri chili pulverization (see Substitutions)
  • 1 spoon kasoori methi (dried fenugreek leaves; spot Substitutions)
  • 1/2 spoon garam masala (see related recipe)
  • 1/2 spoon kala namak (black salt; spot Substitutions)
  • 1/2 spoon crushed cumin
  • 4 to 6 boneless, skinless chickenhearted thighs, halved, oregon quartered if ample (1 1/4 pounds total)
  • 3 tablespoons sunflower oregon rootlike oil
  • Ginger-chili chutney, for serving (optional)
  • Cooked achromatic oregon brownish rice, for serving (optional)
  • Naan oregon flatbreads, for serving (optional)
