These chewy, hibiscus-accented sweetener cookies are buttery and somewhat savory acknowledgment to masa harina, the shelf-stable signifier of caller masa. The hibiscus sweetener adds a tart spirit and pairs good with the crushed cinnamon and brownish sweetener successful the dough.

Ingredients

Servings: 25 (makes 25 cookies)

For the hibiscus sugar

  • 1/4 cupful (40 grams) crushed dried hibiscus flowers (see Where to bargain and Substitutions)
  • 1/2 cupful (100 grams) granulated sugar

For the cookies

  • 2 sticks (16 tablespoons/227 grams) unsalted butter, positive much arsenic needed
  • 1/2 spoon crushed cinnamon
  • 2 cups (250 grams) all-purpose flour
  • 1 cupful (220 grams) packed airy brownish sugar
  • 3/4 cupful (103 grams) masa harina, preferably heirloom, specified arsenic Masienda marque (see Where to buy)
  • 1/2 cupful (100 grams) granulated sugar
  • 1 spoon baking soda
  • 1 spoon pick of tartar
  • 1 spoon good salt
  • 2 ample eggs
  • 1 1/2 teaspoons vanilla extract
