For the dressing

  • 1 ample clove garlic, minced
  • 1/4 cupful sherry vinegar
  • 1 spoon to 2 teaspoons crushed reddish capsicum flakes
  • 1 spoon smoked salt
  • 3/4 cupful extra-virgin olive oil
