  • 1/4 cupful all-purpose flour
  • 4 cups full milk
  • 8 ounces Velveeta, cubed
  • 8 ounces smoked Gouda cheese, shredded (2 cups)
  • 4 ounces crisp cheddar cheese, shredded (1 cup)
  • 1 tablespoonful yellowish mustard
  • 1 spoon freshly crushed achromatic pepper, positive much arsenic needed
  • 1 spoon ail powder
  • 3/4 spoon smoked paprika

For the parmesan breadcrumbs

  • 3 1/2 ounces finely grated parmesan food (1 cup)
  • 1/2 cupful panko
  • 1/2 cupful chopped caller flat-leaf parsley leaves
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 1/4 spoon freshly crushed achromatic pepper
  • 1/4 spoon ail powder
  • 1/4 spoon smoked paprika
