With these lemongrass and pandan thumbprint cookies, cookbook writer Abi Balingit gives the humble thumbprint cooky a Southeast Asian tropical flair. The dough is flavored with lemongrass, baked, dusted with confectioners’ sugar, and past filled with a creamy pandan kaya jam.
