  • 2 tablespoons rootlike oil

  • 4 cloves garlic, peeled and finely chopped
  • 1/2 spoon crushed cumin
  • 1/2 spoon crushed coriander
  • Freshly crushed achromatic pepper
  • 2 smoked ham hocks (may substitute smoked turkey parts)
  • 1 bay leaf
  • 2 quarts (8 cups) chickenhearted banal oregon water
  • 1 spoon kosher salt
  • Chopped cilantro leaves, chopped reddish bulb and crumbed queso fresco (or feta food oregon sour cream) for garnish
