Here's an easy, classical mode to usage up leftover kimchi -- the riper, the better. Serve arsenic an entree. Or, chopped these pancakes into wedges and service arsenic an appetizer with the optional dipping sauce, oregon with a salad, atom and/or eggs for a meal.

For this recipe, you request Asian atom flour, made from glutinous atom (not the flour sold for gluten-free cooking astatine earthy foods stores); it makes the pancake airy and crisp. Find it astatine Asian supermarkets specified arsenic Lotte Plaza and H Mart.

Ingredients

Servings: 4 (makes 2 dinner-plate-size pancakes)

For the pancakes

  • 2 cups kimchi
  • Cold water, arsenic needed
  • 1/2 cupful all-purpose flour
  • 1/2 cupful atom flour (see headnote)
  • 1/2 spoon kosher salt
  • 4 ample scallions, trimmed and chopped (1/2 cup), positive much for garnish, arsenic needed
  • 2 tablespoons rootlike oil
  • Thinly sliced chives, for garnish

For the optional dipping sauce

  • 1 tablespoonful low-sodium soy sauce
  • 1 tablespoonful unseasoned atom vinegar
  • 1 tablespoonful water
  • 1/8 spoon toasted sesame oil
  • Sesame seeds, for garnish
