  • 4 (1 1/2 pounds) potatoes, preferably Yukon Gold, but immoderate volition do
  • 1 1/2 teaspoons kosher salt, divided
  • 2 tablespoons unsalted food oregon ghee
  • 1 1/2 teaspoons coriander seed
  • 1/2 spoon cumin seed
  • 1/2 cupful (4 ounces) diced yellowish onion
  • 2 teaspoons minced caller ginger oregon 1 spoon crushed ginger
  • 1 ail clove, minced
  • 1 cupful (8 ounces) frozen mixed vegetables (see NOTE)
  • 3/4 spoon garam masala
  • 1/4 spoon cayenne pepper
  • 1/4 spoon freshly crushed achromatic pepper
  • 1/4 cupful all-purpose flour (may substitute 1/2 cupful panko)
  • 1 ample ovum (optional; if utilizing panko)
  • Vegetable oil, for frying
  • Your favourite chutney, for serving
