Fish and fennel similar each other. In this recipe, those ingredients, positive vino and saffron, each wed to make a reasonably elegant crockery for a weeknight meal.

If halibut is excessively dear, immoderate good, white-fleshed food fillets oregon arctic char that is astatine slightest 3/4 inch thick.

  • 1 mean bulb fennel (may substitute 3 to 4 small, level California fennel bulbs)
  • 1 mean onion
  • 1/4 cupful olive oil
  • 1 lb skinless halibut fillet, pin bones removed (may substitute arctic char)
  • Salt
  • Freshly crushed achromatic pepper
  • 1/2 cupful water, positive much arsenic needed
  • 1/4 cupful herb paste
  • Pinch saffron threads
  • 1/2 cupful adust achromatic wine
  • 1/4 cupful dried oregon caller reddish currants (may substitute champagne grapes oregon gooseberries)
