This delicious fruitcake relies connected the Guinness stout for its flavor, arsenic opposed to the much commonly utilized rum and brandy. The pleasantly bitter notes of the brew complement the effect successful the cake. If you like, you tin soak the finished barroom with much beer, to taste.

Ingredients

Servings: 20 (makes 1 9-inch cake)

  • Nonstick cooking spray
  • 3 1/2 cups (438 grams) self-rising flour
  • 2 teaspoons crushed cinnamon
  • 1 spoon freshly grated nutmeg
  • 1 spoon crushed ginger
  • 16 tablespoons (2 sticks/227 grams) unsalted butter, chopped into tiny chunks
  • 1 cupful positive 2 tablespoons (234 grams) packed airy brownish sugar
  • 2/3 cupful (95 grams) dried currants
  • 2/3 cupful (95 grams) aureate raisins
  • 2/3 cupful (50 grams) good-quality candied citrus peel
  • Finely grated zest of 1 lemon
  • 3/4 cupful positive 1 tablespoonful (195 milliliters) Guinness oregon different stout, positive much for serving (optional)
  • 4 ample eggs
  • Confectioners' sugar, for serving (optional)
  • Unsweetened whipped pick oregon salted butter, for serving
